Tilapia and collard greens


Parmesan tilapia
5 tilapia fillets
1/4 cup part skim ricotta cheese
3 tbsp light mayo
2 tbsp lemon juice
1/2 cup shredded parmesan cheese
2 tbsp butter
4 tbsp bread crumbs
1 tsp Herb de Provence

mix all ingredients
spread on tilapia
broil or grill (use foil on the grill)

Collard greens on the grill
1 bunch of collard greens cleaned and chopped
1/2 tsp liquid smoke
sprinkling of kosher salt
1 tbsp olive oil
sprinkling of garlic powder

put all ingredients in a Reynolds "big bag"
close "big bag" and shake to mix
grill for 10-15 minutes or until greens are done cooking


Serve the tilapia and greens with salad (the kids got pasta with theirs)


Taste/preparation analysis:
SO TASTY! Next time I'll add more moisture to the "big bag" because the collard greens got a little burned on the bottom. The fish was perfect and we served it over the greens. A very good, low calorie meal. Filling, but not too much food. The kids ate spaghetti with theirs--which I think was more popular than the fish and the greens.

  1. What a good sounding combination! Too bad my husband doesn't like fish, or greens. Maybe I will make it just for myself.
