
Grilled Flank Steak
Makes 4.5 generous portions.
Ingredients
1.5 pound flank steak
1/2 cup low sodium soy sauce
2 tbsp brown sugar
2 tbsp olive oil
1 tbsp lemon juice
1 tbsp garlic powder
Instructions
Mix ingredients and pour over flank steak.
Marinate overnight.
Let sit out 30 minutes before grilling.
Grill to desired doneness basting with leftover sauce.
Serve over fresh baby spinach. (The kids also had pasta.)

Grilled Citrus Asparagus
1 bunch of asparagus
zest and juice from one orange
dash of kosher salt
garlic powder
fresh ground pepper
wash asparagus and trim
zest and juice orange, pour over asparagus
sprinkle with pepper, salt, and garlic powder
grill on indirect heat for 10-15 minutes (to desired doneness)
Grilled Mushrooms
12 button mushrooms, rinsed with stems trimmed
2 tsp olive oil
dash of kosher salt
garlic powder
black pepper
arrange mushrooms on platter
drizzle with olive oil
sprinkle with salt, garlic, and pepper
grill for 10 minutes or until done
Arrange plate of fresh spinach leaves. Place steak, asparagus, and mushrooms in center of spinach pile. Shred about one ounce of parmesan over the top. Serve warm.
Taste/preparation analysis:
I cooked the steak too long... The husband likes it when his beef still begs for its life as it is coming off the grill. I prefer it dead and well done. Typically, we compromise. Tonight I was managing dribbling practice, toy throwing contests, pasta on the stove (in the house) and three items on the grill (outside). I had also waged war on the dandelions that have invaded my yard. So, I was a wee-bit busy, and the steak got over done (for the husband's taste). Dinner was excellent. You know you've scored a good one when the almost-eight-year-old tries to make himself hurl because there is "too much green" on his plate. Isaiah downed everything and Esther-Faith wouldn't eat the asparagus because she "didn't want it in her belly." Overall, it only took about 15 minutes to prep, 20 minutes (or so) to cook, and about 15 minutes to eat. I had it all done and on the table when the husband walked through the door--he likes it that way. And we've got appointments tonight so we had to eat early. Anyway, we followed dinner with a hot cup of coffee and it was nearly perfect.
Looks yummy...even if it was overdone for Tim.
