"Cincinnati" Chili

1 tbsp olive oil
1 large onion, chopped
2 pounds ground beef
6 cups cold water
1/4 cup chili powder
1 tsp cinnamon
1 tsp cumin
1/4 tsp allspice
1/4 tsp cloves
1 bay leaf
1/2 ounce unsweetened chocolate
21 ounces beef broth
15 ounces tomato sauce
2 tbsp cider vinegar
1/4 tsp cayenne pepper

Cook onion in hot oil until tender.

Place ground beef in large pot with water. Stir to break up the beef. Bring to boil over high heat. Cook thoroughly (five minutes or so). Drain.

While beef is cooking, measure chili powder, cinnamon, cumin, allspice, cloves, chocolate, and cayenne pepper into bowl and mix.

Return beef to pot and add cooked onions. Stir in bay leaf, beef broth, tomato sauce, cider vinegar, and spices. Bring to boil. Reduce heat to low, cover, and simmer for 1.5 hours.

Serve over hot angel hair pasta and top with shredded cheddar cheese and chopped onions.
